Food and nutrition science is the study of the nutritional value of foods as well as the chemicals and organic materials that make up every type of food. Testing foods to see what they contain in order to make sure they are safe for consumption is the job of many who work for government agencies, private corporations, and human interest groups. Those who have a solid foundation in math and science will be able to perform tests and conduct research easily. Courses in food and nutrition science include: chemistry, biology, organic science, food analysis, and courses in the laws that surround food consumption.
Studying the components that make up food allows researchers to study the eating habits of different groups, the amount of calories that are in certain foods, and the diseases that are associated with food. Food borne illnesses can become a problem when food is not cooked thoroughly, or not stored properly. Preservatives, additives, and other chemicals are used to allow certain foods to stay fresh for a longer amount of time. This is just one of the many areas that researchers in food and nutrition departments work on.
Since many foods contain chemicals and materials that raise cholesterol levels, contain high levels of fat, and are prepared in oils that are not healthy, researchers are working on ways to help people remain healthy without sacrificing taste or other healthy materials that may be found in these foods. Students who want to work for companies that are inventing new cooking oils, foods that contain less fat, and healthy foods that still taste good will be trained in labs and will have to complete a thesis before they will be allowed to graduate. Food science and nutrition research is responsible for nutritional labels that are available on all foods. Research will continue because of the health risks and benefits that food provides.
